Our restaurant was established in 1793, and the fifth generation of the family invented zabonzuke, the “original inventor of zabonzuke. Zabonzuke are available either cut into wedges or whole. Only the bitter outer part of the zabon peel is scraped off, frozen, and cooked each time. We focus on aroma and bitterness and value fresh flavors. Zabon pickles are also used in our products such as Zabon-mochu, Zabon-maki, Shimabara-daiko (dorayaki), and Zabon-pie. The sponge cake is made from high quality ingredients such as rice syrup, pomelo sugar, and sun-dried eggs, and is baked with care using the traditional separate baking method (whipping the egg white and yolk separately). It is cut into 10 pieces for easy eating. Please enjoy it as a souvenir, gift, or snack.
